Abstract: Darslikda unumli ovqatlanish va diyetologiyaning zamonaviy omillari, tamoyillari va ulami tashkil qilishda qo'llaniladigan yangi texnologiyalar ifodalangan bo'lib, alohida e’tibor O'zbekiston Respublikasi iqlimi, ob-havo sharoitlarini inobatga olgan holda dolzarb mavzular keng ko'lamda yoritilgan. Alohida e ’tibor parhez ovqatlanishning turli holatlar va kasalliklarda qo'llanishi asoslariga qaratilgan. Shuning bilan birga ovqatli mahsulotlarga ishlov berish, ulaming tarkibini tuzish, taomlardagi asosiy ozuqaviy moddalaming miqdorlari, ulaming beradigan quwati, tayyorlash jarayonlariga oid ma’lumotlar keltirilgan.
